Sussex puddings don’t get much more Sussex than this Banoffee Pie Ice Cream from Resident Pheasant. Resident Pheasant is a new Sussex brand that I am delighted to say is sourcing its ingredients from local Sussex suppliers, using eco-friendly and sustainable packaging, and hand-making the ice cream (they also make chocolate).
“Life’s too short for boring.” That’s what owner, Anna Laird, thought when she decided to take a leap of faith and start this eco-friendly, and ethical chocolate and ice cream business. And her mission is to get plastic barred from chocolate and ice cream for good, while being: ‘Kind to the Planet’, ‘Kind to the Farmers’ and ‘Throw Shade Towards Boring’.
They have very groovy packaging and fun flavours but for an extra dash of Sussexness, it has to be this fool-proof Banoffee Sundae.
Serves 4.
Serve in 4 Sundae or dessert glasses.
Ingredients
Biscuit base:
100 g digestive biscuits (crushed)
60 g unsalted butter
Melted toffee sauce:
40 g butter
125 g dark muscovado sugar
150 ml double cream
Layers:
8 scoops Resident Pheasant Banoffee ice cream
4 small bananas, peeled and sliced
2 digestive biscuits (crushed)
4 squares of 70% Dark Vegan Chocolate Bar- Resident Pheasant
Method
1) To make the biscuit base, crush 100g digestive biscuits in a clear bag using a wooden rolling pin until they form into crumbs.
2) On a very low heat, melt the 60g butter into a pan and tip the digestives. Mix and turn off the heat. Leave aside to cool.
3) To make the toffee sauce, add your 40g of butter, 125g dark muscovado sugar, 150 ml double cream into a small pan and bring to the boil. Stir until smooth and slightly bubbling. Again, leave to cool.
4) Now for the fun bit! Take your sundae glasses and add the biscuit base crumbs to the bottom. Add a little of the sauce, top with a scoop of ice cream, then add the banana slices. You can repeat the layers if you are using tall sundae glasses. Finish off with topping with finely grated chocolate.
